Portugal has a rich tradition of preparing cod recipes. Among the vast range of options for preparing cod, Bacalhau à Gomes de Sá stands out as a national dish.
This popular dish is named after its inventor, a merchant and cook named José Luis Gomes de Sá who lived in Porto between the end of the 19th century and the beginning of the 20th century.
José Luis created this recipe while working as a cook at the Lisbonense restaurant in Porto. The dish is made from flaked cod marinated in milk, baked with potatoes and onion, and topped with boiled eggs, black olives, and parsley. It quickly became a typical dish throughout northern Portugal and was proposed as one of the 7 Wonders of Portuguese Gastronomy.

Portuguese cod fish pie recipe
Ingredients
- 600 g of cod fish or salt cod (you can find this in any common fish market)
- 150 ml of olive oil
- 3 garlic clove
- 4 white onions
- 800 g purpose potatoes
- 150 g black olives or Kalamata olives
- 2 eggs
- 200 ml milk
- Fresh parsley
- Kosher salt or regular salt
Black ground pepper or pepper flakes
You will also need casserole or glass oven tray.
Preparation of cod a la Gomes de Sá
Cod a la Gomes de Sá is a traditional Portuguese dish with salted cod and potato slices as the star ingredients. This classic recipe is named after José Luís Gomes de Sá, a Portuguese merchant who popularized the dish in the 19th century.
Cod fish preparation
To prepare Cod a la Gomes de Sá, you will need to start by soaking the salted cod in water for at least 24 hours, ensure you always use cold water. Change the water several times to remove excess salt. Once the cod is desalted, it is then flaked the cod fillets and marinated in milk for a few hours. is very important you allow cod in milk to rest for at least 2/3 hours to get the end result right.
Meanwhile, peel and slice potatoes and onions.
First, brown the onion and garlic in oil and remove them with a slotted spoon. Place sliced potatoes in a baking dish and pour the onion-infused oil over them. Add the evenly distributed cod on top of the potatoes, followed by the onion. Season with salt and pepper.
Now is a good time to start to preheated oven. In a baking dish, layer the cooked potatoes and onions with the flaked cod.
Top with slices of boiled eggs, black olives, black pepper and parsley. Drizzle with olive oil and bake in the oven until golden and crispy on top. Around 30 – 45 minutes.
Serve Bacalhau à Gomes de Sá hot, straight from the oven, with a side of Portuguese greens or a fresh salad. This delicious creamy cod fish pie is perfect for a family dinner or a special occasion.
